
Arugula Salad
Ingredients:
- 1 bag washed arugula
- 1/2 C halved pear tomatoes
- 2 T toasted pinenuts
- 1 C shaved parmesan (use vegetable peeler)
- 1 lemon
- 1/4 C parmesan
- Salt and pepper
Arrange arugula on platter. Scatter tomatoes on arugula. Top with cheese and pinenuts. Add salt and pepper. Squeeze lemon over greens finishing with olive oil.
Variation: place pieces of bresaola (air dried beef) on bottom of platter and add a few drops of white truffle oil.
If too sticky, add more pasta water or olive oil
