Arugula Salad
 
Ingredients:

  • 1 bag washed arugula
  • 1/2 C halved pear tomatoes
  • 2 T toasted pinenuts
  • 1 C shaved parmesan (use vegetable peeler)
  • 1 lemon
  • 1/4 C parmesan
  • Salt and pepper

    Arrange arugula on platter. Scatter tomatoes on arugula. Top with cheese and pinenuts. Add salt and pepper. Squeeze lemon over greens finishing with olive oil.

    Variation: place pieces of bresaola (air dried beef) on bottom of platter and add a few drops of white truffle oil.

    If too sticky, add more pasta water or olive oil
