
Healthier Collards

This recipe is a healthier version using lower fat turkey bacon and not cooked until death
Buy approx 1 1/4 collard greens, wash well, dry. Halve them and discard the stems and the center ribs.
Stack collard-leaf halves and roll crosswise into a cigar shape. Cut crosswise into very fine slices (no thicker than 3/4 inch-should look like coleslaw or shredded basil) with a sharp knife.
Cook 3 slices of turkey bacon in a 12-inch nonstick skillet over moderate heat until crisp. Add collards, tossing to coat, and cook until just bright green, about 1 minute. Season with salt, fresh black pepper and serve immediately
